Barrel-Aged Vinegar

Both vinegars come from a family-run farm in the Hudson Valley, where tart apples are handpicked at the peak of fall and pressed into cider. The apple cider vinegar ages in New York white oak until it turns raw and bright, mother left in, with a clean depth drawn from the wood. The maple vinegar takes that same apple base and blends it with pure New York maple syrup, then ages over six months in new toasted oak, so a soft sweetness carries alongside the acidity.
